Okay so we brought home some fresh South Carolina peaches this week (they are better than Georgia!) and I woke up this morning wanting to use some in a Dutch Baby. Absolutely delicious! And with a few personal tweaks , I always change up a recipe in some fashion, voila Fresh peach dutch baby. Below is the link for the recipe I used (did not have any blueberries but will try that one next). And I caramalized the chopped peaches first. put in my cast iron skillet with 2 tbsp butter and 2 tbsp sugar. cooked about 5 minutes to carmalize, then added 2 more tab so butter and swirled around, then poured the batter right on top. puffed up beautifully and served with syrup and sausage. This cast iron skillet is my favorite. If you don't have one, get one! you will love it.
